Okay, so I created a new character recently based on a third-party supplement. It's a neat class, but I wanted to create a "legal" version of the character, just in case.
The concept for the character is a knight in service of a fey court. But not strictly a knight in our understanding. More like a warrior in service of a fey court. The character is an Eladrin and themed after winter. One of the large inspirations for the character is Toshiro Mifune. However, I want to avoid making the character a samurai. Any recommendations for class/subclasses? Nature powers would be a plus, but magic is not strictly required.
Pretty much all classes have at least one potentially pertinent subclass if you're up for reflavoring. I mean, there's the super obvious ones like Archfey Warlock but with a nature skin applied the Battle Smith can be a great fit too - and that one's on the face of it completely the wrong vibe. Just reskin the Steel Defender as some kind of wintry nature spirit manifestation, with its hp representing your connection to it, and give your spells a similar treatment - boom, winter knight. I wouldn't discount the samurai class either, for much the same reason - a cultured, educated warrior poet seems very apt as a fey court's strong arm, and "samurai" is really just an aesthetic you can replace with whatever other evocative impression you want.

That’s a good enough reason. The Ancients paladin is a good suggestion, though being extra effective against fey could both be a pro or a con depending on how fey courts work in your setting. My personal top-3, aside from the aforementioned reskinned Battle Smith, would be Valor Bard and Swarmkeeper Ranger. Bard just works for fey, and Valor ups the warrior factor without compromising on the making-everyone-better qualities of the Bard class; for the Ranger a Swarm would be a great extension of the fey court’s power towards its chosen champion - just need to create a suitably frosty crawly critter, I think.

The suggestions given so far are really good. Fey Wanderer and Sword bard also works. Oath of Ancients paladin would probably be my first pick though but all in all it's more about flavouring than mechanics.
I would also consider bladesinging wizard as canonically they are guardians of elven society, and it's no too much of a stretch to swap that for a fey court.

Oath of the Ancients Paladin?
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
I agree, Dex-based OotA Eladrin Paladin. The rest is fluff and feat selection.
