So I know a few bundles exist and that I can also only purchase specific items from a source.
For example, Out of the Abyss I can just purchase the monsters which is nice since I have the hard copy of the book and only want to use the creatures to build encounters in DnD Beyond. But what if I just want monsters from multiple sourcebooks, is there a bundle available to just purchase the monsters from sourcebooks or do I need to go to each source and add each item separately?
I've not seen a way to buy collectively like that. I think you need to buy them all separately, sorry.

That second one, yes. 'Bundles' only exist for complete sourcebooks, and are broken down into the "Player Bundle" (sourcebooks such as the PHB, Xanathar's Guide, and Volo's Guide to DM Headaches, i.e. things players need to make characters), the "Adventure Bundle" (all the printed prebuilt adventures Wizards wants you to run instead of making your own games), and the "Legendary Bundle" (giving DDB well over a thousand dollars in exchange for owning more D&D books than you will ever use).
