There's an optimal number of full (2d20, 1d12, 1d%, 1d10, 1d8, 4d6, 1d4) dice sets.
- one for each possible player at the table, colour coordinated (8)
- two for the DM (2)
- one communal for the table (1)
- one fancy set for REALLY important rolls (1)
So in total: 12 sets.
That makes 24d20, 12d12, 12d%, 12d10, 12d8, 48d6, 12d4. Each in their own coloured sets with high contrast and easy to read numbers. That should really be enough to cover any roll at the table.
However this does not account for naughty dice or test rolling of dice before the game :). also as a DM I find I use more than 2 sets of dice.

Same. I typically have three sets (one of which is a set of 11).
I occasionally need more, but found that it's rare enough that it's simpler to just borrow those than to clutter my workspace with more sets. If it starts getting more regular I might add more. Still, just being able to roll multiple attacks (either for the same monster or for multiple monsters) is handy.

On a connected point, loads of dice is good, but practice rolling them while others are talking is not :). I have had several players with the very bad habit of rolling dice while it wasn’t there turn.
This is a known cheating tactic, also. They decide to try a skill check right after they happen to roll really well, and they already rolled it, to save time! Would've been rude to interrupt you...
Back on topic, I'm kinda annoyed about how many dice I have. I want complete sets, but I don't want to get rid of my sets when I lose one of the dice... Plus, I've been playing online mostly, so I don't even use the damn things anymore.

none of my players do that, there is no pre rolling of dice, I call for the skill roll and they roll when told to in the Dice tray in the middle of the table, I am talking just randomly rolling dice as a bit of a Roleplayer tick that some seem to have.
Also I run an online only game as well, and as DM all my dice rolls are with real dice, my players about 50% use online dice the other roll for real because they also have loads of dice.

I’ve been collecting D20’s in all the various material types, metal, amathyst, bloodstone, opal, etc…

I’ve never seen that personally from players but I’m not surprised it happens
