I"m fairly certain that I never had any confusion over what hit dice were. The thing that had me confused was why the Elf in the Monster Manual had 1 HD (which was a d8) and my Elf PC only had a d6.

Ah, well, that's just because of the unspoken default rule about elves, which is that they're better than you. Shockingly, still applies if you're an elf!
