The discussion of what the “best” choices are for each wizard subclass could potentially go on for months, so I chose to instead ask some more experienced wizard show they like to tie their capstones into their character. And why they chose what they did.
For my summoner (who I made starting at level 20 as a villain character) I chose Find Familiar, Flock of familiars, summon fey and magic circle. I don’t think I need to say how useful it is to always have these ready, and I choose to think of it as his familiars (a giant scarab, a two-headed weasel and an Osprey) having been summoned so much that they all stick around at once (which goes against RAW but I can’t read so.)
while summon fey and magic circle are definitely the most practical of the four, for a character who lives in the lower plains (the second layer of Acheron) a constant defense against outsiders is always important to have prepared.
You wouldn't need to have find familiar prepared unless you really want to cast it as a non-ritual, but since the casting time is so long as is, I would pick another spell that fits flavorfully for your character.
