In my mind, the eldrich blast would be themed as your punches.
You run up and have as many punches as you would eldrich blasts.
The issue with this is eldritch blast is a ranged attack. So it’s not just a question of re-skinning it. If you use it in melee, you should be getting disadvantage on your melee attacks. (Yes, you can take XBE, but that’s just cheesy.) Otherwise, you’re getting a d10 magical force damage per attack in melee, combine it with agonizing blast, and you’re going to be better than most all 1-handed melee builds.
Out of curiosity, thoughts on the approaches I've tried to take with this? Trying to go with flavorbrew that's not too detatched from the source.
Before you say anything though, I know that the whole "Fighting Initiate" option is pretty mac-and-cheesy, and likely won't even work without the DM's permission. Still, they want unarmed, and it's not like we have access to Spiked Gauntlets anymore...
Go for a Celestial Warlock and have a Ki-rin or some sort of noble or kami style spirit as you patron.
Celestial would give you access to a few cleric spells as well as a pool of d6's to use as healing which you can flavour as using ki/acu-pressure style touches or gathering chi and sending it out as a blast of energy for those times when you really have to heal someone at range. The other abilities can all be seen in a certain "monk-ish" way of enlightenment.
For spells maybe think about Sword Burst and have it as a whirlwind of unarmed strikes instead of throwing out magical swords and then have a some spells based around your patron.
For Invocations Armour of Shadows is probably the only must have and flavour it as part of your fighting style fighting style, maybe include some meditation you do along with a prayer to your patron.
For pact either blade or tome would work best. Blade can be a gift from your patron for achieving a certain level of enlightenment or maybe your tome is the teaching of your patron that you are writing as you adventure.
Edit: I do like the idea of the warlock pact of tome for it though andhaving the book packed with Buddist style prayers and chanting for various rituals to mimic things like Detect Poison and Disease, Purify Food and Water, Ceremony and Silence.

I was thinking about the 1 that gives you a familiar as well. a little fairy dragon(that looks more like an eastern style dragon).
I figured the mage armor spell would be me adjusting my clothes like they do in the martial arts movies right before a fight.

No I get it. If i ever get to play this character i wouldn't take the extended range option, just to keep with the character design.
