I tried character creation in a campaign of a friend that had content sharing enabled and after that tried to create on myself with the tool, not bound to the campaign and looking at the players handbook I realized I did not have all the choices mentioned there (for example the sorcerous origin was limited to draconic bloodline instead of bein a choice between that and wild magic)
Yup. By default all you get is the SRD, which only has one subclass per class and about half the spells from the PHB (though it also has the spells that first showed up in the Elemental Evils player's guide, which make up around a third of the spells in Xanathar's Guide to Everything).

Without owning any content or building a character in a campaign with sharing open, you are limited to the Basic Rules, which have less options than presented in the PHB.

Basically, the PHB would give you more options automatically in the builder, but you can also buy options piecemeal (and those options do get credited toward the cost of the book you bought them from) and there is also private homebrew if you'd rather put "sweat equity" of your own elbow grease into your account.

I can't find the option for buying the book partially. I want to buy only one cleric domain, not whole book! Everywhere is information that it is possible, but how? I hate this dndbeyond so much...

Are à la carte purchases of subclasses, feats, and other game listings no longer available? While they are no longer available for purchase, any such items that you've previously purchased will continue to be available for use on D&D Beyond.
I see only product details and product specification at the end of site for buying Player's Handbook. Maybe the option is in another place or is available only with some specific subscription?
Unfortunately, they did a marketplace update like overnight with zero announcement. We can no longer buy things piecemeal anymore. This absolutely sucks.
