The dimensions in the books delineating what counts as Small, Medium, Large, etc. are generally intended to be guidelines rather than hard and fast requirements. If you're tall enough that a high roll on Great Stature puts you a few inches over the line into nominally Large, your size category doesn't change just because of that. Size encompasses more than just height, you don't suddenly take up three extra squares and thus 300% more space because you grew by a foot or so.
Tangentially related: DMs! Try letting your Rune Knight PC grow by 1d4 inches every time they gain a subclass feature for Rune Knight, rather than one time all at once. This would let the character gradually grow in mass and stature as they delve deeper into the power of giants, instead of getting one weird growth spurt once and then never again.
My Bugbear rolled pretty high for height, so I'm well over 7' now. I was just wondering what would happen, if he surpassed 8'. I like your incremental idea Yurei1453.
I mean, regarding the sudden burst, this is magic we're talking about, so it's not hard to justify either way. Personally I like the idea of a sudden burst, particularly since change blindness would probably make it hard for people to catch on to a truly incremental growth.

At level 10, you grow 3D4 inches. What if that makes you "large" now? Does Giant's might become redundant, or do you become Huge?
It doesn't make you large.
