How important is the type of the familiar, celestial, fey, or fiend? If it just takes the stats of the animal that it's fourmd in how is it being a celestial, fey, or fiend matter? Are there benefits to one over another?
As far as the spell Find Familiar is concerned, it changes nothing, but it does for other spells or magical effects, like Protection from Evil and Good, which the type matters.
Also the Ranger ability to track presence (forget what it's called, but it hardly matters), detect evil and good, and so forth. As far as if it matters, well, if the king's protectors cast detect evil while your familiar is around and it pings they've got a fiend present, it might matter to them, and if it matters to them, it might matter to you... ;-)
Edit: Same if you're posing as a super evil guy trying to infiltrate a group and they detect you're running around with a celestial, to be fair, especially as per RAW there's no way to change it once cast initially. Some might consider fey "safest" in normal circumstances, while celestial or fiend can be seen as saying something about your character, for better or worse.
