That's really the whole ting, right there in the title, lol. ANd yes, you can include Light Novels and Manga as well -- I personally stick to anime, but not a snob, lol.
Note, I am not talking about other game systems for anime style play, I mean specifically D&D 5e.
I am just curious. Anime influenced the decision of my player group to do a spell point system in several campaigns, and we we sat down and brainstormed out a new basic systems for magic in D&D using one that draws from visuals and some common mechanics in Anime.
Late in development, I was asked to enable a "doll" Construct (human sized, think something like Alita, but not quite as dangerous, lol) that could be a maid, and I know that came from anime.
How about you? Characters, Settings, Adventures, NPCs, Monsters, Magic -- anything?

I homebrewed a monk subclass a while ago based on the Nen system of Hunger x Hunter - that was very fun, but I never got to playtest it.
I'd say the main influence anime has on me would be with spellcasting. Whenever I play a character, I can't help but have them yell out a super cool (read:super cringe) catchphrase dependent on the spell (and dependent if the spell has verbal components, of course).
Actually, there is one more big influence: Made in Abyss. The world building in that anime got my DM brain turning like never before. It was so unique and so cool at the time, that I designed a large portion of my homebrew world around that idea; a kingdom that sprung up around essentially a gaping pit of weirdness. Of course, the players never managed to get over there. Maybe next time!

I know what you're thinking: "In that flurry of blows, did he use all his ki points, or save one?" Well, are ya feeling lucky, punk?
Huh, that's on my list of anime to watch next season, lol. Which I am dying from the wait to have it start, because this season has mostly been a bust for me.

Ok, you need to read the manga then, and also pick up witch hat atelier. It's GORGEOUS and has some full metal alchemist vibes.
Also topping my list of "follows" with manga, though not in a fantasy world in the least is Asadora.
All fantastic.
Edit: Vinland saga has been top of this season for me. I have an aversion to viking stuff, but it's count of Monte Cristo in disguise and I had caught up with the publications just before the pandemic, and it was one that articulated a lot for me.
I confess don’t do a lot of manga, but that’s mostly because I spend six hours a day reading papers, fiction, and reports, so I am just not ready for more of that. Not huge on LN either, though I have tried with a few.
So I mostly stick to anime — and I confess to being a sub over dub girl, lol. But most of the shonen stuff is unappealing to me. My last really liked show was not a fantasy show: Lycoris Recoil.

Manga has been easier for me lately. I have a niece and a nephew running me ragged, and I'm super into getting them to read so although I want them to read actual books, manga seems a compromise. My own anime addiction feds into theirs. My love of Host club made it one of the first ones I had to show my niece.
Witch hat has a series coming out as well, so at least keep an eye out for it?
Yuri's one genre I can't get into. No issues with lesbianism or same sex couples, it's just the portrayal in the genre is.... off. I think it's because of the heavy overlap with cute girls doing cute things. I tried lycoris because people said action was in it, but the first two EPS just didn't do it for me. Again, too much of the cute girls doing cute things feel. I waffle on whether or not I should try it again, but I'm typical of the old otuku meme: I USED to watch 60 episodes in a week, now I'm good if I get through a 13 episode series in a month...maybe 2... lol I still have to watch the girl from the other side.
The thing to remember about anime and manga is that despite its large popularity among adults, most of it is still produced for teenagers/pre-teens. On top of that, Japan is a fairly conservative society, especially when it comes to issues like homosexuality. That limits what's considered acceptable in things like yuri genre.

Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

On top of that, Japan is a fairly conservative society, especially when it comes to issues like homosexuality. That limits what's considered acceptable in things like yuri genre.
Things used to be different. In the 80's and 90's there was a lot aimed at adults. The earlier part has a lot of movies and ova's and they were exploitative of violence and sex.
In the 90's there were a lot of auteur anime directors and people who pushed animations far as it could go. In the earlier 00's you had a weird return to violence combined with a lot more edgy/broody navel gazing titles.
The "nice boat" of incident of the mid 00's plus the economic situation prior plus over here in the US, the fall of about 4 or 5 companies that would import titles... well, you got a lot less risks, a lot more kids and teen oriented stuff, the move to streaming kinda killed physical media (same here in the US! When's the last time you rented or bought a direct to disk/vhs movie?), and with budgets tightened, the 26 episode standard run became 13.
So now you get a lot of samey stuff aimed at the most bland demographics. (Just like in the US, everything is YA. It's hard to publish outside of the age demographic because that's what sells the best).
This isn't to say there aren't things to pop outside of those constraints and lately I feel like a resurgence of adult or artsy may happen, but really time will tell.
As for how gay it can get.. well, yeah, it constricts itself to Japan's views which leads to some weird comparisons where it is FAR more open with some things and far less with others.
The problem of it often being a gag is problematic, but it's got representation, you can have gay or trans characters that are accepted and even sometimes protagonists when it's only a recent trend in the US. Paradise kiss, princess jellyfish... both are far better than their us contemporaries for representation, and that's just two.
I play D&D, so in other words, NONE of that stuff makes it into my game.
And that’s reasonable for you.
I play D&D , so in other words, SOME of that stuff makes it into my game. Has ever since the Invid gave new meaning to the phrase “Plant People”.
Then again, I am the kind of DM who watches The Expendables and Ocean’s 11 and then makes an adventure by mixing both of them together.

What gets funny is when you look at how much anime is based off D&D. Record of Lodoss War, for example, was apparently based on the D&D campaign its creators were running. And you can see a lot of fantasy anime that use the D&D versions of various mythological monsters.

A previous comment I edited out a couple sentences saying exactly this, lol. JRPGs (the video games), all the isekai, all the general fantasy that doesn't take place specifically in historical Japan, hell even some of the modern day stuff -- all of it is directly related to the use of D&D in Japan, lol.

Yeah -- I have a lot of anime ideas in my new campaign, but it is not an anime campaign.
I don't think I could run an actual anime based campaign. If I did, it would likely be some weird mashup of like a dozen rpg/isekai shows, but I likely wouldn't have much fun, lol.

Record of the lodoss was was literally based on rpgs and publication of it's light novels back in the 80's I think reflected this. (Published in trpg magazine)
Slayers was HUGELY popular to D&D fans...

Also just to go back to anime being "problematic", I was watching skip and loafer and the aunt flat out states she's biologically male. Not last night's session but the one before.
I have a wizard that's creative with noncombat spells in combat. To reward him, I gave him a non combat spell.
To do that I had him meet an elf enchantress who was FASCINATED with cantrips and utility spells.
She was totally based off of elements from Frieren..
