Doing a lvl 20 holiday 1 shot and decided to make a Drunk. Druid monk. For monk I am going 11 levels and open palm sub class. 9 levels of Druid and was thinking Druid of spores. Anyone have any other Druid subclass ideas? Keep in mind this will be melee based not caster based
I'd personally mix shadow monk with moon druid and be a shadow-hopping panther or something.

Moon Druid is definitely a good idea, since you’ll be able to use your monk martial arts in wild shape. Also the level 20 feature gives you unlimited wild shapes to keep you alive. It’s a little broken, so maybe check with your DM, but I imagine it’s fine for a level 20 one shot, since usually the point of those is to power game a bit.
As for monk, and would work, but your idea of open hand is solid. Since you’d be using your turn to use powerful wild shape attacks, open hand just augments your unarmed strikes, without overloading you with features.
These are just suggestions however, since they will need some fine tuning, and it will really depend on how you want to play. This ideas assumes a full melee combatant tank, but if you wanted to lean towards spellcasting or support, I would suggest mercy monk?
For Spores you want as many druid levels as possible otherwise your symbiotic form will not last long (it drops when the temp HP from it run out, and those are tied to druid level.) Personally I would not do more than 5 monk levels. That gives you three attacks regularly and 4 a few times per short rest if you push.
Also, use the UA9 playtest Monk if you can - that way you can MA or flurry on the same turn you activate your spores, instead of needing to wait for the following round and potentially wasting your first turn entirely.
