I'm currently building up my own crazy little homebrew world heavily centered on the Fey and Feywild. But from what I've seen, there are precious few sources on them.
I have the books "Domains of Delight," "Book of Ebon Tide," and "The Wild Beyond the Witchlight." These are all great so far, but I feel like there are others I'm missing out on.
I know an adventure for "Book of Ebon Tide" just came out. Does that offer good general Fey info and stat blocks? Cause I know only part of it is Fey.
I heard that one of the Tome of Beasts by Kobold Press has an extensive Fey section. Is it worth the buy?
If possible, I'm looking specifically for Fey themed subclasses, encounters, dungeons/caves/buildings, magic items, spells. And maybe more already fleshed out Domains in the Feywild. Any good recommendations please?

for 5th edition rules that would be fine, however if you want to deep dive the lore, and base it on the last 30 years of D&D material there are some really good deep dive lore videos by several D&D Lore Youtube creators.

From a Reddit entry I recalled seeing before with a similar question:
Kobold Press - "Wrath of The River King", "Tales of The Old Margreve" and "Courts of the Shadow Fey".
I advise for the second. The first is a little short, and the third is kind of setting dependent (you could read about it on the internet - the gist is that the plane most connected to Midgard is a mix of The Feywilds and The Shadowfell; it's still good, but it might need some tunning if you want to incorporate it in other settings)
When it comes to monsters, "Tome of Beasts" by them has a lot of fey creatures. Might need some tunning since the CR are a little off and some monster abilities are not that pleasent for your players , but it's still a great bestiary.
I don't have any experience with any of these personally.
Big agree with both of these. Wanderer’s Guide is very short but has great concepts. What I’ve read of Into Wonderland is phenomenal, best fey module I’ve seen.
https://codexofstrings.com/products/the-emerald-crown This one I really like the art and some story concepts, but whether it’s written by AI or it’s the author’s style, it’s very much not a full module. Kinda gives some broad ideas and npc’s as a jumping off point
My advice would actually be to get a copy of Grimm's Fairytales, one that has English translations of their original stories. Warning: Many have 'adult' aspects that are likely not appropriate for most groups, but you will get a sense of what dark fey can really be like.

I really like "Into the Weird and Wyld" - is system neutral but has some good ideas for a darker wilder feywild.
