What does it mean to not be able to be blinded. Does that mean just from the blindness spell? Or like, disease? What if they get literally blind folded, or have their eyes gouged out/removed. Or are in darkness.
I'm trying to conceptualize what it means from a flavor perspective to be unable to be blinded. Is it different from blindsight?
It means they're immune to spells or abilities that inflict the blinded condition. It doesn't give them the ability to see in light conditions they wouldn't otherwise be able to or see through solid objects.

As 6thLyranGuard stated, they are immune to the Blinded condition.
So once your Circle of Spores Druid reaches level 14 and your character gains the Fungal Body feature, the description states "The fungal spores in your body alter you".
So for a 'flavor perspective' you could imagine that the fungus that you have been weaving for 14 levels has changed your body to the point that the fungus has strengthened your optical nerve, preventing your eyes from receiving the Blinded condition.
Now, your will have to figure out the flavor as to why you can't be DeafenedFrightened or Poisoned, and why a Critical Hit can't land on you.
Breathe, dragons; sing of the First World, forged out of chaos and painted with beauty. Sing of Bahamut, the Platinum, molding the shape of the mountains and rivers; Sing too of Chromatic Tiamat, painting all over the infinite canvas. I'm not sure that I would be immune from the blinded condition, though. Because I can still be blindfolded, right? Things can still "effectively blind" me, like being in a heavily obscured area such as darkness spell or fog, I think?
Every creature in the monster manual I find who has immunity to the blinded condition also has blind sight. And I don't think that's true for my character. It's only useful against the blindness spell, sunbeam/sunburst, things like that?
The rules do what they say. They say that you're immune to the Blinded Condition, therefore nothing can blind you because that would require the Blinded Condition.
Of course, your DM can rule otherwise, but that's what the rules are.

Since any of those things give a blinded condition either tempory or permanent, I would say yes to all of the above. Your fungi and spores now allow you to see when otherwise you wouldn't be able to.

While yes indeed you are immune to those spells, and do not need to make a save for them...

The ability doesn't specify from what sources, so this includes any source, since the lack of light causes a Blinded condition you are immune, the loss of eyes causes the blinded condition you are immune.
But wait theirs more, something happens, you lost your eyes and ears, no problem you can still see and hear as normal because your ability says so.
Just as a reminder the Circle of Spores is the Necromancer of Druids... so read into that as your will, but yeah I see this as the first steps towards a Druid version of a Lich.
