I read what i thought somewhere in an official books that Necromancers using spells to bring out Undead that the Undead receives the character's alignment also. Was that something or a spell ect?
The summons available to players are always Neutral so they can do whatever a player asks them to without conflict. That is, at least, my interpretation.
Create Undead specifically says you exert control over Ghouls, but their alignment in the spell remains Chaotic Evil. This means your army of ghoulish minions will be vulnerable to the Detect, Protect Against, and Dispel Evil spells by design.

Animate dead does not do this, nor does the necromancy wizard subclass in 5e.

Not that I know of. Summon undead doesn't, and what other undead-creating spells are there?
