Is there any OFFICAL list of what races a Changling can turn into? It is too vague in the racial description. Please link something official if possible.
Can I turn into a Cambion, or another demon/devil that has 2 arms, 2 legs and a head? Can I turn into a Mind Flayer? What about a Werewolf? A better description would be great...

A complete list of forms you can transform into as a Changeling would be far too long to be useful, and would obviously not include anything custom that a DM included in their campaign.
The species feature defines it pretty clearly: it must be either Medium or Small, it must have the same basic arrangement of limbs you have, and you can't duplicate the appearance of a specific individual you've never seen. Cambions, Mind Flayers, and Werewolves all meet those criteria. Don't overthink it; it's pretty simple.
Thank you wagnarokkr. I was asking cause my DM likes to be STRICT with things, and applies logic in the magical game... If I can find a list that would help... He says a Devil or Demon would not work cause they are not Humanoid, but Fiends... same with Monstrosities, Undead, Etc...I think I should be able to do things I have see at least, but its an arguement to decide things at this point...

Well, looking at RAW
Shapechanger
As an action, you can change your appearance and your voice. You determine the specifics of the changes, including your coloration, hair length, and sex. You can also adjust your height and weight and can change your size between Medium and Small. You can make yourself appear as a member of another race, though none of your game statistics change. You can’t duplicate the appearance of an individual you’ve never seen, and you must adopt a form that has the same basic arrangement of limbs that you have. Your clothing and equipment aren’t changed by this trait.
You stay in the new form until you use an action to revert to your true form or until you die.
It seems that for the examples:
Cambion - maybe, DMs call on wings
other demon/devil that has 2 arms, 2 legs and a head - as long as it is medium or small
Mind Flayer - no reason why not ... but you don't get their abilities so kind of hard to pull off that one.
Werewolf - sure, but better be a good reason for it, and don't expect werewolves to be fooled.
It might be worth emphasising that the Changeling doesn’t gain any of the abilities of the creature whose form it takes: I wonder if that might be why your DM is anxious to have a restricted list of forms.
(It would be a bit weird to limit the Changeling to Humanoids, when it is itself a Fey creature.)
The Cambion, rules as written, is not viable, due to the wings (assuming they’re counted as additional limbs). You also can’t take the form of a creature you’ve never seen.

There is no need for a DM to make changeling powers worse than they already are. You are not limited to humanoids, you are limited to size and limb arrangement. There is no logic I can think of to limit your abilities to just humanoid other than the whims of the DM.
I suspect the intent is for it to behave like the Change Appearance effect of alter self, which doesn't care about creature type, just shape. Limbs are not super well defined -- are tentacles (mind flayer), wings and tails (cambion), etc, limbs?
If allowed, I would definitely rule that any such additions are nonfunctional, though -- you can have the add-on, but you can't control it like the real thing.

The only restrictions are what it says right there. There is nothing in there saying the form you choose has to be a Humanoid.
