Mordenkainen's Monsters of the Multiverse set of Mini's includes an Outhouse Mimic. But I can't find any stats. I already had my group meet a pair of them but I was wondering or hoping for official stats. It seems like different mimics should have different stats not just 1 blanket set.
There are stats for it, sort of. A mimic that big would be a Large sized creature and the stat block would be the Giant Mimic block. If you feel the outhouse shape is smaller than that, then mimics are traditionally medium sized creatures so their normal stat block would work.
EDIT: As an aside, in some published adventures, I've seen objects as large as a rowboat use basic Mimic stats when revealed to be a Mimic.

damage per round: 5*(CR+1) (2014) or 6*(CR+1) (2024)
hit points: 15*(CR+1)
A monster that's a bit high in one area can be a bit lower in others. For example, the mimic does 12-16 dpr depending on if it has someone grappled, which is on the low side, but has high hit points.
