It's basically a marketing gimmick to reassure buyers that with the not-edition change that they are still compatible and not wasting their money.
All adventures and most other books are 2024 compatible. The only books that aren't are the old PHB, MM and DMG (and to be honest, most of the content in those books is still quite usable), plus a handful of options spread throughout the other books.
It's just that it takes time and effort to make the new images that displays that label, and they haven't bothered doing so (as of yet).

Why some old books have the lable that says "compatible with the 2024 core rulebooks" and others don't have such a label? What is the difference?
There is no difference, they simply haven't applied the label to all books.

My guess is because they are only referring to the core books. Those other books aren't core.
