If you would like your Goliath character to have Resistance to Cold damage, you can always ask if the DM uses the secrets from Rime of the Frostmaiden.
Or just use the old Goliath, if the DM permits it.

Seems counter intuitive, but i dont see anything in 2024 phb.
Looking at building a character for IceWind Dale, and thought a frost goliath might resist some of the climate.
That's correct, the new version of the Goliath species doesn't provide any damage resistance.
