In an upcoming session I am having, I plan on having Enlarge being cast on a creature that is already gargantuan who then drinks a potion of growth, making them grow 2 sizes. Is there a way to make creatures larger in the vtt than just the standard 4x4? if not, are there any suggestions on how I can achieve this effect on DnDbeyond's vtt?
By RAW, I don't think creatures can get bigger then Gargantuan, since Gargantuan is the largest size category. If you want to go outside the rules, you could try grouping the creature token to an overlay of the desired size.

That was true in 5e, though in 5.5e they actually removed the "or larger" part of it and now it just defines Gargantuan as 20 by 20 feet. I'm not sure that was a good idea, but there it is.

Did they, though? I remember when they were talking about the haunting revenant and saying, we realized gargantuan doesn’t have a size cap, so we could make a monster be a whole house.

Depends where you look. In the PHB/BR combat rules they say it's 20x20, and those are the rules pointed to by size and the monster manual. In the DMG miniatures rules they still have "or more".
The Enlarge option of the Enlarge/Reduce spells says it increases the creature's size category. If a creature was already at the maximum size category, could its size be increased by the spell? Likewise, what happens if you try to Reduce a creature that is already Tiny? If it is still Tiny, does that mean you can still only fit 4 Reduced, Tiny creatures in a 5 foot square? If you can't Enlarge or Reduce a creature's size category because it is already at the maximum or minimum, would the bonuses or penalties to Strength checks, Strength saves and damage still apply?
Stuff like this is why some DMs run sessions in Clip studio or other programs. We often fight creatures outside of the size restraints in many VTTS (or at least the ones we tried.)
As for how to do it Beyond, something we have done is just the creature into sections, and move them together, thought it does often get clunky. You can though use this to make parts targetable, like taking out the legs to slow it down etc.

The better question: Why doesn't the VTT support freely resizing tokens when enough spells and abilities cause the change? This is a failure, plain and simple, on the people in charge of that part of the site.

When a new system is being built, as maps is, it is not a "failure" for it to not have all the features
Depending on how (since we know the code for this site is being rewritten) the maps interacts with other parts of the website, it might not have been an option at the start.
