There is now three official strahd stat blocks. In the Curse of Strahd, which one would you use against the players? Feel free to say why you would choose one over the other.
Depends on what rule set you’re using. If your players are using 5e characters then use the Curse of Strahd version, if they’re using 5.5e then use the Ravenloft version
Better answer is use the version you have access to. No point buying a new book just to get a new stat block if you’ve already got one that can do the job
The module isn't super balanced for the specific power level of Strahd anyway. The module version of Strahd has a completely broken lair action (pro tip: never create a monster with both regeneration and the ability to walk through walls) that as a DM you have to just decide not to abuse, and a bunch of fairly pointless spells, but is otherwise probably weaker than the others unless you customize his spell list (which, since he's a 2014 spellcaster, is assumed a standard change).
I ran Curse of Strahd shortly after it was released, so I used that book's stat block because at the time it was the only 5E stat block for Strahd. That being said, I had to goose up his hit points because my players at the time came very close to steamrolling him in two rounds.
I voted Homebrew, but I'd probably use the Ravenloft block as the base
