So I’m toying with a character concept and I’m curious/ want people’s opinions, does an Aasimar’s “Celestial Revelation” stack “Innate Sorcery” or do I have to pick one over the other?

You can have them both active at once, though you’d need at least two turns to get them both started.

Neither directly effects the other, though they would each augment different parts of your spells.
