Depends on what you want to include. Ship of Night, for instance, is a great Dungeon adventure in the underdark, but wasn't a full module. The Shattered Circle was a full module, and featured some creatures supposedly originating in the underdark, but didn't actually have connections to the underdark in the dungeon. Do you want to include such things as The Lost City, which predate the underdark but exist in what would probably have been called the underdark were it published 10 years later? And there'll be a whole host of material from 3rd party publishers, and even more if you include homebrew stuff posted on the web.

More context is likely needed. Is this an ongoing campaign or starting from scratch?
If ongoing, what are the circumstances that sent the party there? What are the larger ongoing themes and trends?
If starting from scratch, you have an opportunity to feel out the players, to find out what sort of game they're interested in.
