Say you're a DM (in which case this relates to a boss) or Player. Would you rather have Resistance to Fire, Lightning, Cold, Necrotic, and Poison damage
Pure resistance to BPS is generally bad gameplay - it disproportionately punishes marshal classes, who struggle to do other types of damage. Elemental resistances, on the other hand, tend to punish casters, who are much more flexible in their damage types and, even if they might not be as optimal, can still pivot and utilize their primary class features by selecting different spells.
There are going to be times when resistance to BPS makes sense for a monster, but those times should be used sparingly and only when they add something very important to the feel of a particular fight.
I have no preference in general, i do when i can build something interesting around it like a puzzle fight.
Resistance to bludgeoning, Piercing, and Slashing would be neat if the environment had methods of implementing other damage. Barrels of oil that can burn, rocks that can be pushed to trap parts of this boss, a pit of acid or lava or other instant kill condition that can be met through teamwork.

"Hope is a fire that burns in us all If only an ember, awaiting your call To rise up in triumph should we all unite The spark for change is yours to ignite." Kalandra - The State of the World
BPS resistance is almost always going to be the more powerful option. In terms of gameplay, I would be unlikely to use either option, because I don't give creatures resistances just to make them stronger, I give them resistances for a particular theme.

OR
Bludgeoning, Piercing, and Slashing damage?

That can help you in-game too, if you're playing The Wild Beyond the Witchlight.
