If I buy the full versions of the PHB or DM Guide with a Hero Tier subscription, but end up canceling after 6 months, what happens to my books? Do they turn into PDF versions that I just have on my PC like a downloaded version, or would I lose them forever? Would I be able to access them offline, or do I have to go to DDB website every time I wanted to use them? For that matter, is the Compendium just a PDF version, and am I able to download it to my PC?
I'm going to buy myself the books as a holiday present to myself, and I like the permanence/mobility/shareability of owning a book, and I'm trying to find out if these traits apply to the digital versions measure up in comparison.
The subscriptions (Hero or Master) are not needed in any way to keep the purchased content. Once you make a purchase from the Marketplace, it will be on your account always, regardless of what you do with the subscriptions.
But would I only be able to access it from the DDB website? Would I have the ability to download it to my tablet (which doesn't have mobile data) and take it to the park for outside D&D sessions, like an ebook or PDF file?
You can download the purchase on the D&D Beyond mobile app yes. So, yes, you can download all of your purchases and see them offline.
Be aware that the mobile app does not have all of the functionalities of the website yet. It is in development, but surely you can have there Compendium and listings (no character sheets yet).

You can download what you purchased yourself, not what gets shared with you. You can access what gets shared, that's what the sharing is for, but you can't download it.

You can download shared content in the app (I've done it myself); but if you lose access to the shared content, either by leaving the campaign doing the sharing or by the subscription lapsing, you won't be able to read the shared books on the app... or at least that's what I remember happening.

I'm not an employee, but once the entitlements sync up in your case you will lose access. The above note about "keeping the app offline" to prevent losing access is both disingenuous since it's trying to teach you how to keep non entitled stuff and incorrect because eventually, the app will require a login specifically to sync for this reason.
Subscriptions just allow you to save more characters, but more importantly, share your books with players in the same campaign. They have no effect on your own access to your books.
