2) Yes. A character sheet can be set to private, then only the name, gender, race, and class will be displayed to other players, but they will not be able to see skills, spells, or any feature choices. Character background, description, and extras are always hidden from other players though.
You can check out the buyers guide thread some solutions. You can use homebrew to re add all player content (very work intensive). There are also coupons that can be used to get books (can do multiple books at a time) 25% off.

2. Can players read each other character sheets on the campaign page? Kinda want to keep them hidden.
