Because these things make sense lore wise, and it’s not the end of your character because oh no I can’t use this one subclass, it doesn’t undermine the main idea of you can be whatever you want because if I really want to be a close range swords person with magic I can do it another way, and just wrapping around the main topic of the gender restriction in the first place if it makes sense for the lore then do it, but if it doesn’t then don’t.
I don't see how that's a great argument, though, because any DM can make any lore argument they want about subclass restrictions. Or, put another way, the fact that the dev team decided that only Elves and Dwarves should get special only-for-them subclasses is based on lore made up by the very same dev team. They could have easily not done that.
There's no Christianity in the Forgotten Realms or Ebberron. Why would clergypeople of the fantasy gods be restricted by Christian rules or traditions regarding gender roles and pacifism in the first place? Not all religions, real or fictional, expect any of this from their clergy.
Also, restricting things by fantasy race, which isn't real, is a completly different thing than recreating real-world gender discrimination in a tame that's meant to be fun for everyone.
there are Priests in DnD lore just they're not like what RL Priests are like that being said my sub-class or class will be strictly for Buffing/Debuffing people

I would love to see a Doomguide Priest in the church of Kelemvor as a PC. I kinda started working on one but not sure exactly how to finish.
