When I cast Mage Armor on the sheet, it doesnt seem to change my AC on my sheet. If there is a way to fake it til I make it, how do I do that? In the middle of combat, I need a way to tell that my armor that lasts 8 hours is on my sheet and that the generator/calculator is doing its job.
The sheet does not update for spells cast or other activated abilities as there's no way for it to know how long those are active. For mage armor, I suggest adding a custom AC calculation to your character and always having it up at the cost of 3 level 1 slots a day.
Edit: To do that, click on your armor class on the sheet then hit customize, input a custom AC for base armor + dex that's equal to 13 + your dex bonus.
Yep. Homebrew is the best way to do this. And it's a good way to learn how to get used to working within homebrew... very limited things you are looking for and easy to toggle on and off without customizing every time you turn around.

The other one I had was to rename Chain shirt and just un/equip as needed.
Chain shirt wont give you full DEX bonus, you should use +1 studded leather or +2 leather and reduce weight to 0.
Click on AC on the character sheet then in the spot for Base AC + Dex enter 10+3+ your dex bonus. I'd label the Adjustment Mage Armor

I made myself a homebrew magic item "Spell Effect: Mage Armor"
It's a wondrous item with 1 'Modifier':
Modifier Type: Bonus
Modifier Subtype: Unarmored Armor Class
Fixed Value: 3
It works even in conjunction with Bracers of Defense.
