Animism refers to natural features having minds and mental influences.
Animism and psionics is moreorless the same thing. The invented word "psionics" is technobabble for what is a prehistoric human concept, basically to grant it a veneer of scientific decorum.
Maybe call the psionic skill "Animism", so it has wider usage as well, and fits better within the many premodern settings of D&D.
Note, among reallife cultures, concepts relating to psychic influence are just as much about emotions as they are about intellects, mainly relating to the inner intention, the desire, the will.
The word "mental" is a bit too cerebral, albeit the concepts include that too.
Well you might need a skill to know something about psionics other than the spell text.
I for one am going with an alternate formulation of psionics, so a skill might be warranted but I will probably just lump it into Arcana to avoid having to homebrew an entire skill and then give the players some possible way of gaining proficiency with it. (I won't discuss the formulation here because the players don't know the details yet and I want to avoid spoilers until they encounter psionics in my world.)
EDIT: Actually re-reading the poll I think the argument for Insight is better.
I notice that Arcana, Insight, and Persuasion, are Int, Wis, and Cha respectively.
Possibly, a new psionic skill would use any of these three mental abilities.
That should probably be the case for Arcana and Religion too. Default to Intelligence, but otherwise use your spellcasting ability. For example, a Warlock seems like it should know things about Arcana, even if using Charisma.

Which skill should relate to things psionic?

The flood gates.....they have been opened......
All jokes aside, I feel that it should probably be it’s own skill check. Will it happen? Probably not, but that’s my 2 cents.

I think that it should be its own skill check. Arcana would work as well, but that is more knowledge of lore than mental concentration and fortitude.
A fool pulls the leaves. A brute chops the trunk. A sage digs the roots.

Assuming you didn't want a new skill for it, I would say Arcana since that's the study of non mundane effects.
Why would there need to be a skill when virtually all magical abilities rely on their own casting stat?

WOTC lies. We know that WOTC lies. WOTC knows that we know that WOTC lies. We know that WOTC knows that we know that WOTC lies. And still they lie.
Because of the above (a paraphrase from Orwell) I no longer post to the forums -- PM me if you need help or anything.
Heh, this skill is perfect for the DM to say: "You have this weird feeling that someone is staring at you."
