I just noticed that proficiency bonus is listed in monster stat blocks. Has this always been a thing and I just never noticed, or is this new/coinciding with the release of Tasha’s?
You mean in the actual stat blocks of Monster Manual or Volo's guide? It's new... it certainly was not in the statblocks when the books were printed (I have the hardcopies sitting right here).
I'm not 100% on the presence of it on DDB before, but I think it is new. However, I use Foundry a lot and Foundry has had it all along so it's hard to be sure.

Oh... that's nice! I don't know if this will be something that we can Customize later on, but it would make adding in Sidekicks even easier to use as other Beasts. As it is, we can at least adjust HP and AC to level them up somewhat similar to Sidekicks, but this would make the attacks level up too and would finish out my last "oh that would be cool" feature on these. As it is, you can still level them up decently enough by bouncing from species to species in some progressions (take the Wolf). Much easier than homebrewing some of the followers and mounts.
It's not clear to me why WOTC didn't include Proficiency Bonus in all stat blocks from the get-go. I guess since they baked it into all the action/reaction/bonus action descriptions already, they figured you don't need it (and since it is tied to CR, you can look it up if you do). But it is so much easier to just have it there -- I noticed this in Foundry.
