I'm very new to DnD my character is a warlock and our party kill a hydra and i took the Hydra heart. What can i do with the heart? any source materials on this would be great as well, Thank you all.
There are monster-part components to some spells and potions but I am not familiar with anything that calls out a hydra heart- at least not in official material. This is likely something you will need to express interest in exploring via research and rp in game. Perhaps it can be brewed into some sort of regenerative elixir, or imbued into a figurine or whatever the DM thinks is appropriate and balanced for your group.
maybe homebrew a potion, something that boosts your ac temporarily by giving you stone skin?

You could try to sell it? It is completely up to your GM if a NPC will give you something for it.
Usually monster pieces are taken for proof of a kill on a bounty. This isn't monster hunter, there aren't official uses for dead monster part.
In my campaign one of my PCs took the eye of a kraken. She bought a jar of pickle juice and is pickling it.
Most of this stuff is just for fun and flavor.
If they decided to eat the eye I would probably make them roll a constitution saving throw and maybe give them a buff or debuff based on what they roll. But this is just me trying to make something fun. There's no rules surrounding the consumption of pickled kraken eye.
If you're looking for published material on monster parts, there isn't any, that kind of stuff has always been left up to DM's for whatever best fits their world.
It's the sort of thing that might be a component for a magic item (based on XGTE, Uncommon), but whether it actually is, and if so what it's a component for, is up to the DM.
