You hire enough staff for 150 tables to be served by them. You can also open at half capacity tonight and can open at full tomorrow if you work on it after closing. Your staff is 35-50 people. 35 will be just barely making it and 50 way above needed. A staff member will be payed 3 gold per week for a chef and 2 (plus tips) for waiters. You need a minimum of 5 chefs and 30 waiters.

Ok then!  We will open at half capacity with an admission fee for the first,   exclusive, opening night. 

For only a mere 1 Gold per person, you can enjoy the experience of opening this legendary establishment-  or you can become a founding member of the Ironguard Tavern Club for 50 GP- with discounts on drinks, events and a special “members only” performance by the resident bard Tayra!

Ok but for staff: we can hire 6 chefs and 41 waiters for $100 a week in wages. 

Assuming that this business profits the same as most restaurants, the employees make the company 6-7 times their wages, so we should be putting down a good 5/600-ish a week, plus a $50 bonus for any new members that sign up. This will drastically reduce our need for rent money, and should be able to pay off the monthly $3060 in operating expenses, plus a little spending money if we get lucky 

Charge 5 gp for holy water at the front (really just salt water, but shhhh) with a complementary small holy ale (again, just ale, with a seal of approval) for higher profile members of the Ironguard.

   (Based off the phb table-  basically higher end but not aristocratic prices).    Entertainment is usually free but special shows have a entry fee of 2 silver to 1 gold per person.  

Tharo'era hides in the treasure room, firstly so as not to scare people, secondly to keep an eye on his safe, thirdly (because one must be bored after a while of staring at a metal box) to make his "room" (i.e. the treasure room) look like a prison by carving prison graffiti and drow faces to "fool the looters who want our stock".
