im creating a one shot for my friends. They are 3, level 6 and gave them 3K gold to buy items (even allowed them magic items, though they can get either 2 common or 1 rare one.
I want to create a challenging and fun dungeon experience. What set of monsters and combinations can I get?
It depends a lot on the classes and magic items your players choose. However, an interesting one-shot idea involves battling a troll encampment. There could be a bounty on their heads by the local city or village, and the party can choose to either engage in combat or explore a diplomatic solution. You could even introduce a boss with a spell of protection from elements, preventing them from countering his regeneration without dispelling magic.
Three level sixes with access to plate? Anything CR 8 and below sounds appropriate. Beyond that is the domain of telos. If the point is to use a single monster in a stand-up fight, CR 9 could work. If you need the casters to shine, pick strong monsters with good constitution and poor wisdom saves. If you need the melee characters to shine, pick several CR 5s with good mental saves. Variety is always better than the lack thereof, so why not a room with ~10 CR1/2s?
what Really matters is what kind of theme are you going for?
some kind of alien installation of smooth, dark metal and no natural light?= mind flayers, intellect devouerers, cranium rats, or swarm of
a vine coated cavern with dappled light and fallen trees?= myconoids, shambling mounds, vegepygmys, (homebrew plant monster?)
the adandoned labratory of a mad scientest?= flesh golems, zombie clots, various other constructs and undead
a subterranian swamp with a stinking bog at the center?= bullywugs, grung, snakes, froghemoth
the sky truly is the limit, and many monsters fit together thematically, you just have to find them. i reccomend looking at the random encounter tables in XGTE
