With the coming of Baldur's Gate 3, I really took a look at the Mind Flayers and their lore. But for all of my studies, I have not yet found any rules for ceremorphosis. If my friend's player is human and is infected with one of the tadpoles, what could he do to play through the following seven days (or six minutes if it is an experimental one like from Baldur's Gate 3)? and would he have to change race to a homebrewed Illithid? Or should he make a new character entirely?

Well, if the ceremorphosis goes off without a hitch, he'll lose all of his memory and personality. His character will be effectively dead.

The tl;dr is that the host's brain is eaten, so they are 100% dead.
