I am looking to give my players a good social encounter in a city they will be staying in. Are their any models I can follow, or some sort of idea chart I can look at for inspiration or at the very least some sort of structure to follow?
I can't point to a chart or anything, but there's a saying for authors and scriptwriters that all good dialogue is a negotiation. Person A wants something, and Person B either wants to stop them or doesn't want to give it to them. But maybe, if Person A can provide something Person B wants, Person B might change their mind. It's just a matter of finding out what that is. I know that's not much, but I hope it helps!
