A couple of books I would recommend. The "Tome of Beasts" from Kobold Press, it has over 400 monsters in it with a different flavor to the original Monster Manual. Also, I would recommend "The Monsters Know What There're Doing" by Keith Ammann, he is releasing a second book in January 2022 called "Moar, Monsters know what they are doing!". I know "Tome of Beasts" and "The monsters know what they are doing" are available on PDF if you don't want a hardcover, unsure if the new one will be available in PDF.
Folks do seem to like Kobold Press for their monster offerings. IIRC the studio and WotC sort of have a revolving door of design talent between the two, so there stuff has a high design quality/compatability reputation. Heatsmith's book is also a cool consolidation of monsters that have appeared in sorta WotC's margins, it's a cool service to the hobby.

Howdy folks, anyone got any recommendations for alternatives to the WotC monster books (MM, MToF, VGtM)?

The Monster Codex is also from Kobold Press and it does have some interesting monsters as well.
