Hello all! I guess I could find this information using basic betting websites (I've tried though and they don't have any examples so its hard to be sure), I think I got it from just reading the book (Tomb of Annihilation) but I still wanted to have a "conversation" with someone.
So what I understand from this is that the favorite to win is the "Big Honker" but on the payout the total equals to ÷7... If a player bets 10 gp win, do they get their 10gp + 1gp 4 sp 2cp?
on the other case when you bet for the least favorite to win the "Mountain Thunder" if a player bets 10gp and wins the player would get 10gp + 70gp ?

Well, the house isn't getting its cut, but yes, if you bet 7 gp on Big Honker you'll win 8 gp of you win. The intent appears to be that on average you will neither win nor lose money.
Unless that's multiple races, that table doesn't make any sense, though, because it adds up to more than 100%.
