Enemy Resistances - Why, oh, why aren't Intellect Devourer either resistant or immune to Psychic damage? Seems like some low hanging fruit. Mixing up the resistances can be really powewrful though so only for DMs who know what they're doing...
psychic damage affects the mind so I'm not comfortable with a brain with legs being immune to brain stuff.
however, that somehow sparked my imagination. now I want to see a flesh golem where damage causes parts to fall off and begin doing borderline broken things like an intellect devourer. maybe a liver with legs leaping into a host by devouring constitution! several crawling claws (with legs!) burrowing into a host with drained dexterity to devour and replace arm/leg bones! snake-like strength sapping spine devourer! a lung that causes exhaustion? flying eyes that first blind and then replace the old eye? two ambiguously suspicious small rolling objects that devour charisma and then...?
anyway, kill it slowly so you can defeat the angry/hungry parts individually instead of confronting them all at once due to some 'lucky' sneak attack crit. oh, and definitely add some fans and sporadic magnets in the evil science lab to ruin non-magical ranged attacks.
I entirely take the point, but they're thematically supposed to be part of an illithid colony for the most part so presumably are being controlled by 'stronger' minds.
A hydra who grows an entirely new hydra whenever a head is "killed". :P
"...so the players created a continent spanning hydra-chain. their process was simple: cut off a head, allow a new body to sprout from that neck stump, the new hydra (a copy of (and attached to) the old hydra) would inevitably include a few heads of its own, so then cut off a head from the newly budded hydra to repeat the process 15ft further down the line. it became the 'backbone' to an innovative new communications network almost overnight. globalization moved at the speed of monstrosity..."

The flesh golem idea is really nice though.
