Wondering what are some interesting options for building enemy groups of creatures to fight the party at different levels. Akin to a barbarian-like creature, cleric-like, sorcerer-like, bard-like that form a group and challenge the party in combat.

My current first choice for a Faerûn adventurer:
Aasimar, Genie Touched Tenser's Floating Disk Chill Touch Mind Sliver, Barbarian, 17 CHA, 14 or 13 STR, Path of the Wild Heart Bear, LV4 Multiclass Paladin, Blind Fighting, Oath of Devotion, LV7 Paladin 4 Inspiring Leader 18 CHA, LV11 Paladin 8 Ability Score Improvement 20 CHA, LV15 Paladin 12 Mounted Combatant, LV19 Paladin 16 Boon of Irresistible Offense 15 STR, LV20 Multiclass Barbarian 4 Boon of Desperate Resilience 16 STR. Info
Official monsters have some pretty good options, at low levels things like accolyte (cleric), bandit (fighter) and apprentice wizard. At higher CR you have things like gladiator (barbarian) and archdruid.
If you want something specific you can also form homebrew monsters creating them in a similar way to a PC though you probably don't need to worry about all the features just thought that they might need for the encounter.
A long time ago in a galaxy far far away I maintained a thread of abilities that appeared under official monsters that simulated class features. Things like reckless for barbarians work nicely. What I would not do is directly port class features into monster stat blocks.
