I'm starting to DM Phandelver and Below. I've run through the campaign myself and I've added many side quests and NPCs from my own playthroughs to keep the players interested- to give them additional things to explore in the area.
I'd like to expand on this- have any of you created or added your own home-brew quests for Phandelver and Below?
I'm currently running two published in tandem. Phandelver and Below, and Dragon's of Icespire Peak. This has provided the PCs plenty of options to pursue while possibly changing the ending of one or both of the adventures. If the PCs focnus on Phandelver and ignore Cryovain, they will likely be fighting an adult dragon instead of a young one. If they ignore Phandelver too long, the Illithid will have a greater probability of success in their villianous mechanations.
I even adjust the side quest monsters encountered to give the PCs more variaty and help the two stories mesh together well.

This. There is much material around Phandalin and DoIP is really good to introduce as well. I don't mesh them together per se, but if they are looking for something specific or come across a location I use the material of DoIP. PaBtSO is quite rich in itself, but it's more about building characters and what people love. Although it is very thin in that perspective considering the ammounts of NPC's there are in this time period. (I made a list of all these NPC in this post)

DM for Tyranny of Dragons and Phandelver and Below, two in-person campaigns that meet weekly on Friday and Saturday nights.
This. There is much material around Phandalin and DoIP is really good to introduce as well.
