So my players met Morgantha at the village of Barovia. One player bought a whole cart full of dream pastries and is hooked! But about 10 minutes later the party find her stuffing a child into a bag. She then tries to depart but the party catch up to her. She immediately gave up the child and tried to depart but they have her arm up her back and wont believe the "I just needed a child to pay of their parents debts and work it off"
We are just outside the village. How would you guys try and save her for letter on in the campaign? one of her daughters turns up? A troll or random encounter saves her? maybe my homebrewed sanguine zealots(strahd's private army) randomly turns up and she causes enough noise so that the party have to fight them and she can sneak away?
I really want her to still present as a old frail woman selling crack cocaine pastries. and not this big powerful night hag. maybe i'll just use her heartstone and dip out to the ethereal plane?

Having her vanish into the ethereal is definitely the easiest way.
Yeah, there's no problem with exposing the fact that she's much scarier than she lets on - especially if the party are the only ones who know it, so the townsfolk may consider them crazy if they're shouting about it in the streets.
Let the party have their "win" moment where they truly discover something is wrong with her, but have her get away of her own volition. Whether that's disappearing into the ethereal, a deathly fight where she knocks everybody unconscious and runs away, etc.
Sending a distraction and having the NPC just "mysteriously" vanish, when we're trying to stop her, would leave a bad taste in my mouth, if I were a player.

So I also want to point out that one of the party member have eaten an entire cart of the pastries because he's a glutton and is obsessed with food. So I ended the session shortly after that. I'm wondering if I should have him roll a incredible high dc constitution saving throw and fall asleep. then just have Morgantha sleep the rest of the party with a max level sleep spell and then just smile laugh and dip.
She is a hag so she has the spell astral whatever that basically allows her to vanish into the ethereal once a day. I two am DM-Ing and I plan for her to return and offer the PC's a place to stay on the road maybe, so that way Strahd won't be able to come in. She will use disguise self because they have met her before. For a way for her to disappear, you could have one of the daughters show up and fight her (she can just get another one) and she will dip out. Or it could be something as simple as "Oh look over there!" and then disappear.
