Hi! I'm writing a homebrew campaign for a group I'm starting in a few weeks, and I want to include the elemental planes as part of the quest. Unfortunately, I can't seem to find much information on elemental planes in any official D&D books. Are there any unofficial resources to learn about these planes, or any official ones that I missed? I enjoy homebrewing the world and the campaign, but I don't want to end up writing a book for this one campaign about an area that they aren't going to be in for that long.
My first thought is manual of the planes. It hasn’t been updated for 5e, but there are 1, 3 and 4 versions. You might start with one of those and adapt it to 5.
There is the Princes of Apocalypse official module that you might find some useful information in. The (2014) dungeon masters guide has a section going through each of the planes and has a few paragraphs for each of the elemental planes. If you're looking for a little more unofficial, you'll probably find something good browsing the DM's Guild.

"When are we gonna take a snack break?"

4e's planes are mostly the same as 5e, definitely check there.
