Ok, so my players are trying to get an invitation to a banquet. They've gotten these so far through quests for people who already have invitations.
They have, so far:
Fought (and killed) a loan shark
Done a Battle of the Bands
They need one last invitation, and for each invitation I want them to do a different kind of quest. I also had them run a dungeon recently, and they just did a jail break. Any ideas for a quest they can do, or should I just have them do another fight?

I think it would be cool if you had them try to get back a stolen relic or other important object from a faction/tribe/cult/whatever, but it could be either a diplomatic mission or they could go in for a fight. This gives your players a choice and a backup plan if words aren't enough. This would be a great time for a bard to shine, if your party has one. Another option, since you already did both a fight and something geared toward a bard, is that they could try to steal it, or arrange some sort of competition, with the winner taking the artifact/relic. They would presumably get the invitation upon delivering the item, and it is your choice what the item is and whether it has any impact on the story later.

It's a royal banquet, hosted by the leader of the city (who is an oppressive religious leader; the group is going for espionage purposes). And I reeeeeeally wanted to make an actual loan shark but it didn't make sense for the setting lol.

Could combine research with storyline by questing for lost religious texts (which the current leadership might prefer stay lost, but can't say that publicly, no...)

That actually fits in really well with a storyline I'm working on within it...

maybe some sort of sketchy gig from an influential noble that involves the criminal underworld, which can also hold future hooks for things they can use against the theocracy.

- Retrieve a piece of art or religious text owned by a rich collector who doesn't appreciate the meaning of the work and only values it due to its rarity. - Plant evident / prank in someones house as a revenge for some previous slight (e.g. an ex who dumped them, a colleague who stole the business from them, someone who stole from them). - Steal evidence of corruption from someone.
Nature-y quests:
- Find something lost in the sewers - Find a lost dog / cat / exotic pet - Deal with a bug infestation.
Investigation-y quests:
- Identify a the invitation-holder's stalker - find out what happened to their missing friend - track down the parents of some street kids - identify and deal with someone who graffitied their house - find out who their ex-lover is now seeing
* Note any of these could feed into a larger story line about e.g. a cult kidnapping people, an underworld organization, or some kind of conspiracy

What sort of banquet, and who's throwing it (and is a loan shark just a mobster, or is it an actual shark that loans money? https://gatherer.wizards.com/OTJ/en-us/55/loan-shark)
