In the campaign that I am running either the upcoming session or the next one my party is likely going to fight a Gulthais Tree to put an end to the Blight that is infecting a forest and I was wondering what to use for the stats for a Gulthais Tree.
I was considering taking a awakened tree and buffing it and giving it the ability to summon blights on a recharge and possibly have it uproot and take on a humanoid form like a larger version of a twig blight after it has taken some damage.
What I'm wondering is what you have used in your campaigns when the party encounters a Gulthais tree and what you think of what I'm mulling over for use in my campaign.
Have you already considered starting with the treant or woodwork stat blocks?
A Treant would make a good choice but its CR is pretty high for the party level(the party is all level 3 with a couple of players that are close to level 4) and the Wood Woad is a bit closer but still a little higher that I am comfortable with sending at the party. If they were a few levels higher either of those would make an excellent choice.
Realistically, I think that a Gulthias Tree would be pretty strong. I found this Homebrewed monster, maybe this will help you get an idea of how to homebrew it.

A level 3 party (I think) shouldn't be able to successfully fight one of these. Just my 2cp.
That looks pretty nice, after some more thought I might wait until they go to level 4(a couple of them are pretty close). Also I was always planning to have them fight it with some backup from the army since a Blight making a forest pretty much unusable is something the Kingdom my campaign is taking place is would want to really avoid.
A Gargantuan plant, the Gulthias Tree has AC 10 and 35 hit points. It is immune to necrotic, poison, psychic damage, and it has resistance to piercing damage. The tree has vulnerability to fire damage.
Curse of Strahd Gulthias Tree:
The Gulthias tree has AC 15, 250 hit points, and immunity to bludgeoning, piercing, and psychic damage. If it is reduced to 0 hit points, it seems to be destroyed but isn't truly dead; it regains 1 hit point every month until it is fully healed.
It shouldn't be too hard to add a few bells and whistles to make the fight more memorable than hacking away at a tree trunk.
Curse of Strahd and Sunless Citadel both use a Gulthias Tree. The interesting thing about a Gulthias Tree is that its just a tree. Undeniably evil. But immobile and unable to attack. It's a tree. The real struggle in fighting an evil tree comes from its guardians and blight children. If you can take a look at it here on D&D beyond or in Curse of Strahd, the Tree Blight is an option either as a guardian or as an animated Gulthias Tree. The Tree Blight is a tree sized blight that is basically like an evil Treant.

Do not destroy the Gulthias tree it is one of the few ways to cure disease in the 2024 version.
