So in the NPC section of the monster manual, it is said the DM can swap any known spell of a NPC with spell without altering the CR. I have a feeling that isn't the case for monster stat blocks other the NPC. But I would like to see what you guys think.
My example would be the Orc Claw of Luthic. She has 3rd level spells, but they are not that strong, and the Orc Hand of Yurtrus has the same CR but only level 2 spell, but they are very different. In other words, I'm pretty sure swapping the Claw's Create food and water for something like Spirit Guardians could up he CR of the monster
In the end, it doesn't matter. Just go for it. If you feel it would make the encounter more interesting or challenging then go ahead and make the change. It's all about the fun =)

"............anybody got any potatoes? We could drop a potato in each hole an' see which ones get viciously mauled by horrible monsters?"
Yes, swapping non-combat spells for combat would ones would up the difficulty of a fight, but it is definitely, absolutely still completely within the rights of a DM to do it. That's your job. Do it. Have fun.
