I am preparing to run my very first campaign. My only issue is that there are a few Characters in the module who don't have stat blocks, If the group decides to fight them, how do I know how much HP they have, their DC, weapons, ETC?

Modules typically only contain new or unique monsters. SKT has a note towards the beginning stating that most of the NPCs/Monster stats are found in the Monster Manual. Do you have the Monster Manual?

She is a spy, the Seven Snakes leader is a bandit captain, the other 6 are bandits. Do you have the physical copy of the module or the DnDBeyond version? If you have the physical copy, you can tell what they are by the bold type in the book. (On page 27, under the "Seven Snakes" heading, Xolkin's stats are called out by "bandit captain" being in bold type.) In the DnDBeyond version, the same thing is emphasized by a hyperlink on "bandit captain" that takes you to the monster entry.

I do have a Monster Manual, the problem, however, is that the NPC is a Human... Do I roll for their stats?
