Is there a way to add Sanity to a character sheet or does it just need to he added as a note?
Here's a way.
Add to your equipment "Arrows". Then click on it, and customize the name to "1 Sanity" and set the cost/weight overrides to 0. Add and subtract at will.
Why the numeral one in front? So it sorts to the top of the list of equipment for use.
Another route would be to make a magic item.
