Demogorgon's gaze is poorly implemented (it should require opponents to choose to avert their gaze at the start of their turns, as written it's a complete waste of an action), which means you're just dealing with his raw toughness and damage output, plus a fairly limited spell list. Which is actually pretty unimpressive for CR 26 (AC 22, HP 406, Attack +17/118; compare Ancient Red Dragon at AC 22, HP 546, attack +17/126, more when it uses its breath weapon). I'd probably make a general rule that averting your gaze is something you do at the start of your turn (and causes you to be blinded towards whatever you are not looking at).

That is going to be difficult to come to a conclusion based on the data you've provided.
Sure we know what the stat block for a Demo is but the characters we have no clue besides just what they are based on your brief description.
Maybe just throw them into an Encounter Builder and see how they match up but based on your data here no one can make any fair assumptions.

Do you mean "The Demogorgon" from Infernal Machine Rebuild? The CR 8 creature? While they are all level 20? They will destroy him without trying.
The one from Mord. Tome of Foes, he likely will beat the party in his lair, but lose to the party outside of it.
