I have a player who’s decided to take strahd up on his offer of power. A little back story he’s a tiefling who’s low wisdom and is under the impression he’s in a vacation in Barovia. So when strahd found him alone and offered him power he thinks it’s a great honor. So far he’s been playing a great spy idk what to do tho if he betrays the party do I have him roll a new character and have his old one become a Dmpc under strahd?
We finished Strahd awhile back and we had a druid who turned on us in the last fight. It made perfect sense with her backstory and she played it out very well. After everything was said and done our DM had informed us that he had a private chit chat with the druid to tell her what may happen if she chose to go down this path. More or less, the party may and likely will, try to murder you where you stand when this goes down. We most definitely did murder her where she stood as the fight progressed.
That's what happened in our party when someone who played things out for the long game. If the tiefling in your campaign doesn't play things as well to last and the party finds out then yah he may die, he may have to roll a character, or it creates an interesting moment where the party brings him to his senses. It's win-win.
I'd recommend having a private one on one with him and explain what could happen if he goes this way. After that let things play out as they may. If you like having him around get him to roll a new character as he can't be expected to sit at the table for hours on end for his character to eventually come up. If the party doesn't kill him and he leaves, then treating him as an NPC would be my recommendation.
Any way it goes down could lead to some pretty memorable moments.

Let him keep control of his character as long as he’s still part of the group.
Maybe he could become like a triple agent and infiltrate Strahd’s inner circle as a spy for the party?
