You just sort of do it. The DM can come up with some prices and maybe some skill rolls would be required, but there isn't really any "official" 5th ed content that rules over this. At best it might fit under some sort of "Downtime Activity" that generates money if done well enough.

I'd rule for general charisma checks as far as selling them on the streets, but taking them to a furrier or shop owner would be more straight foreward. Bigger or more rare pelts would fetch higher prices, but you could probably compare prices for certain goods in the PHB to find a comparable value. Probably won't bring in a lot compared to adventuring though.
