Why wouldn't it just be a Mimic, masquerading as a door? I would straight up use the stats as listed, except I might make it a Large Creature, which would bump its hit dice up to d10s, giving it 67 hit points.
I also wouldn't reveal the trap until after the rogue is fiddling with the lock

I'm going to use a mimic door in my campaign now. This is brilliant!
What about a gargantuan mimic that was in the shape of a dungeon? And every 10 minutes the PCs were in there it would shape shift so that the layout of the dungeon changed.
Mimic can be anything. The door and chest are extremely common but I have used them as tables, chairs and even ceiling beams. The mimic bed was also pretty fun. Who's been sleeping in my bed? Hahaha! This was part of my 3 Owlbear adventure. Yeah, old fairy tales brought to the level of silly.

I can't remember which it was, but I read an adventure once that had a mimic masquerading as the bushes the party were likely to be trying to hide from other creatures behind.
I laughed a bit at the idea of "Okay, I don't think they saw us, let's... hey, why am I stuck to this bush!" and then it trying to eat them, but never used it.
...I once used mimics too many times for one of my old groups, so they started throwing a dagger or hand axe at any treasure chest before approaching it. So I've been kind of sparse about using mimics since then even though I have a new group.

I once had a mimic in the shape of a bridge across a ravine. They crossed one at a time. They thought they were rolling to not fall in. Turns it, it was to see who awoke the creature >:D

I own made a long ladder out of multiple mimics when the pc's got over half way up they attacked knocking the pc's off of them lol.
I was discussing this with another DM and he laughs and says... "Mimic Outhouse" I choked on my coffee!
